Homemade Baked Applesauce Oatmeal
Homemade Baked Applesauce Oatmeal is a simple and healthy breakfast. Loaded with cinnamon and sweet applesauce, it’s like starting the day with a warm-baked oatmeal cookie. (Who wouldn’t want to start everyday like that?)
For most of my life, I’ve had a love/hate relationship with oatmeal. I know all about the health benefits and how good it is for your heart, lowering cholesterol; but it tastes TERRIBLE.
Maybe I was doing something wrong? So I tried doctoring it up with raisins, fruits, syrup, sugar and cinnamon. I really wanted to like it, but after one bite…blah, this is still TERRIBLE.
The only kind of oatmeal I liked was an oatmeal raisin cookie and while I like the idea of eating cookies for breakfast, I know my pants wouldn’t be happy with that decision.
Then one day, I was at a catered work breakfast, where there was this awesome baked dish, it was sweet and warm and delicious. What is this? Baked oatmeal you say?
So for all you Oatmeal haters out there trying to make the relationship work. Oatmeal has undergone some therapy and is ready to win you over. Won’t you give it a chance? I did and we couldn’t be happier.
Homemade Baked Applesauce Oatmeal Tips & Tricks
Initially when you mix all the ingredients, it seems a little soupy. This is not going to be a thick batter. Don’t worry, after it bakes in the oven, the oats soak up the milk and it doesn’t come out mushy.
This recipe is pretty basic, but there are ways to punch things up. Try adding in a 1/2 to 3/4 cup of chopped fruit or berries to the batter before baking. I’ve added in chopped apples, blueberries and it changes up the texture and the flavors nicely.
Also when serving, you can either add maple syrup and a dollop of whipped cream or sometimes, I like to pour a little bit of milk on it and eat like a cereal.
The oatmeal refrigerates well, and if you pop a slice into a microwave oven for 10 – 15 seconds, it’s a nice warm breakfast. My daughters are both big fans of this for breakfast and even for a mid-day snack. (My son is still not a fan of oatmeal in any form…so in our household this gets a 2 out of 3 kid approval rating, which are pretty good odds.)

Homemade Baked Applesauce Oatmeal is a simple and healthy breakfast. Loaded with cinnamon and sweet applesauce.
- 3 cups old fashioned rolled oats
- 2/3 cup brown sugar
- 1 tsp salt
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 2 eggs
- 1/2 cup applesauce
- 2 tsp vanilla
- 1 cup milk
- 1/2 cup blueberries (optional)

Pre-heat the oven to 350-degrees F. In a large bowl combine the oatmeal, salt, baking powder, brown sugar, and cinnamon.

In a separate bowl blend the eggs, applesauce, vanilla and milk. Then add to the oatmeal mixture and thoroughly stir.

Add the oatmeal mixture to a greased 9 x 13″ pan and bake for 40 – 45 minutes. Remove from oven and cool for 10 minutes before serving.

Can be served with whipped cream, in milk or topped with maple syrup and fruit.
Delicious I wanted to try something other than the banana recipes I’ve been doing and this was just right, as I’m diabetic I did not add the sugar and added the dry fruit instead and it worked perfectly.
Very good, added 1 cup of raisins & topped w/ nutmeg.
