Quick and easy Homemade Chocolate Pie Cups are filled with rich creamy pudding and layers of graham cracker crumbs. It’s just like a chocolate pie, but in half the time.

I love chocolate pie, but sometimes I just don’t have the time to pull it together. So I thought maybe there’s a simpler version of a chocolate pie. Something that would have all the chocolately yumminess and graham cracker crust, but without the baking. That’s how Homemade Chocolate Pie Cups were born.

For the chocolate filling, if you’re short on time and want an easier option, try using an instant pudding. However, don’t be afraid to tackle a homemade pudding. It’s actually really easy to make. Plus, just think of the bragging rights…I made pudding – from scratch!

The secret to a good pudding is to constantly stir it. You need to keep everything moving, so that it doesn’t burn and all that stirring prevents lumps from forming – resulting in a creamy and smooth dessert.

While I use a little heavy whipping cream and an egg yolk for richness, for a lighter calorie version you can use 2 cups of milk and eliminate the egg. The pudding will still be creamy and delicious and you’ll feel a little less guilty for enjoying something so decadent.

Another trick is when you add the plastic wrap to the pudding, if you make the wrap come in contact with the pudding a skin won’t form across the top.

Making The Cups

The nice part about these cups is that you can assemble them ahead of time and if you add a layer of the crumbs on the top a skin won’t form. This is a simple way to avoid having to press the plastic wrap down into the pudding.

Let the pudding cool on the counter and give it a good stir every now and again. Once the pudding has cooled a bit, you can assemble the cups. Add a layer of the graham cracker crumble, then a nice thick layer of the chocolate filling and top with another thin layer of crumble.

Cover the cups with plastic wrap and then place in the fridge to cool for an hour. When they’re ready, uncover, add a shot of whipped cream, serve and get ready to hear all the Mmmmmm’s.

ingredients
  • 1/2 cup cocoa powder
  • 3/4 cup sugar
  • 3 tbsp corn starch
  • 1/4 tsp salt
  • 2 tsp vanilla
  • 1-1/2 cup milk
  • 1/2 cup heavy whipping cream
  • 1 egg yolk
  • 1/2 cup white chocolate chips
  • 1/2 cup semi-sweet chocolate chips
Graham Cracker Crumble
  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
instructions
  1. Stir the corn starch, cocoa, sugar and salt together in a medium-sized pan. 

  2. Then slowly add in the water, vanilla, milk and cream making sure to whisk the mixture to break up any clumps. Then separate the egg and add in the yolk.

  3. Bring the mixture to a boil and constantly whisk the mixture to blend in the egg and break up the lumps.  The mixture should be nice and smooth.

  4. Remove from heat and add in the white and semi-sweet chocolate chips, keep stirring to help the chips melt.

  5. Next place the pudding into a large bowl and set aside to cool, stir it every few minutes to prevent a skin from forming across the top. Once the pudding has cooled down, cover with plastic wrap. Make sure the wrap touches the top of the pudding (this will prevent a skin from forming) and cool in the fridge for an hour.

Graham Cracker Crumble
  1. Crush graham crackers and measure out 1 cup. Add the melted butter and stir until the graham crackers are moist.

  2. Place a layer of the graham crackers into a cup or a bowl, then add a layer of pudding and another layer of the crackers.  Top with whipped cream and serve.
