Simple Spicy Corn Salsa
This super simple Spicy Corn Salsa is perfect for any summer picnic or spring gathering. Overflowing with sweet corn, beans, and tomatoes, this zesty corn salsa is bursting with fresh flavors and is absolutely delicious.
So versatile, this recipe is an ideal appetizer, side dish or accompaniment for tacos or burrito bowls. I’ve even seen people, enjoy this vegan dish as a salad.
In fact, it’s so good, that a friend told me in order to continue to have a happy marriage, I needed to share this recipe. So in the spirit of saving marriages everywhere, here’s one of my favorite summer recipes.
Spicy Corn Salsa Tips & Tricks
It’s really hard not to eat the Spicy Corn Salsa while you’re making it, but try to let it marinate for 1/2 hour to blend the flavors together. If you can control yourself and let it marinate overnight, everything just blends together beautifully and enhances the flavors.
What’s great about this salsa is that you can easily dial the spice factor up or down. If you’re bringing to a party where folks are a little spice shy, use only diced tomatoes and a sprinkle of paprika.
For those that want some subtle heat add in a can of diced tomatoes with green chilies. To kick it up a notch, add in some red pepper flakes and a little minced jalapeno pepper (I’m sweating, just thinking about it).
While I love the flavor of cilantro, some people have an aversion to the taste. If you’re concerned, the cilantro can be eliminated and it’ll still be zesty and flavorful.
Spicy Corn Salsa holds up well in the fridge for a few days. It makes so much that you can freeze it for later or serve with tortilla chips and share with friends.

Easy Spicy Corn Salsa made with black beans, tomatoes, cilantro and garlic is perfect with tortilla chips, enjoyed as a salad or a topping for your burrito bowl.
- 2-3 green onion stalks (chopped)
- 2 tbsp cilantro (chopped) optional – add more for deeper flavor
- 2 garlic cloves (chopped)
- 1/4 cup green pepper (chopped)
- 1 14.5 oz can black-eyed peas (drained & rinsed)
- 1 14.5 oz can black beans (drained & rinsed)
- 4 – 5 cups super sweet frozen corn (defrosted)
- 1 14.5 oz can diced tomatoes for a little extra spice use diced tomatoes with chillies
- 1 cup zesty Italian dressing
- sprinkle or paprika
- sprinkle of garlic powder
- salt and pepper
- sprinkle red pepper flakes optional for a little more spice

In a large bowl stir in the garlic, cilantro, green onion, black-eyed peas, black beans, corn and tomatoes. Then pour in the Italian dressing and sprinkle paprika, garlic powder, salt and pepper over the top. Mix thoroughly, cover and let the flavors marinate in the fridge for at least a 1/2 hour, but for optimal flavor refrigerate overnight.

For additional spice, add in red pepper flakes or mince a fresh jalapeno pepper. Serve with tortilla chips, as a fresh salad or as a topping for burrito bowls.
