Cover carrots with water and boil for 8 -10 minutes. They should be tender but still slightly firm. Drain and put aside.
Using the same pot, melt the butter and then add in the brown sugar, the pumpkin spice and a little salt and pepper. The sugar should dissolve and start to foam slightly - about a minute.
Next add in the carrots and stir to coat with the syrup. Enjoy!
