Pumpkin Spice Carrots

Love pumpkin spice? Then you'll love this simple sweet side dish.

ingredients

  • 1 16oz bag of baby carrots
  • 3 tbsp butter
  • 2 tbsp light brown sugar
  • 1/4 tsp pumpkin pie spice
  • sprinkle of salt and pepper

instructions

  1. Cover carrots with water and boil for 8 -10 minutes. They should be tender but still slightly firm. Drain and put aside. 

  2. Using the same pot, melt the butter and then add in the brown sugar, the pumpkin spice and a little salt and pepper. The sugar should dissolve and start to foam slightly - about a minute.

  3. Next add in the carrots and stir to coat with the syrup. Enjoy!
