Mighty Good Mini Quiche
Mighty Good Mini Quiche are a great quick and easy breakfast recipe. Each little ham, cheese quiche cup features a crisp golden crust and is loaded with ham, eggs, and melted cheddar cheese.
Perfect proportioned these simple mini ham and cheese quiche cups are made with crescent rolls and are ready in a flash. Plus they’re packed with plenty of yum!
What is it about breakfast foods? It seems like it’s the one meal that everyone loves. Waffles piled high, scrambled eggs, crisp bacon or garlicky home fries….sigh, I’m getting hungry just thinking about it.
Quick, I Need Mini Quiche!
Anyway, I got it into my head that I wanted to make something quiche like, but in a smaller serving. While a traditional quiche is delicious, I didn’t want to mess around with a pie crust. That’s where the mini quiche comes into play.
These are super easy to make and they’re so pretty that you could easily whip them up for a special brunch or even a coffee date between a couple of friends.
My 3-year old loves these and I find that 1 mini quiche with a little side of fruit is the perfect serving for her. Plus they reheat in the microwave well, so you can make them on a weekend for a quick serve meal during the week.
Tips & Tricks
When making the Mighty Good Mini Quiche, even though my pan is non-stick, I like to use a cooking spray to avoid any casualties. If you don’t use a spray, to help get the quiche out after baking, you can take a butter knife and separate the crust edge from the pan. This’ll loosen it up and they’ll pop out.
Using the pre-made crescent roll for the crust, tuck the dough triangle into the cup. Make sure to over lap the edge and squish it together to make a little dough cup.
For the filling, add in the ham and 1/2 of the cheese as a bottom layer into the cups. Don’t try to cut corners and mix the ham and egg together first, you’ll just end up with a big mess.
Next add in your egg mixture. The solution will seep into the spaces between the ham so that everything will bake together. Then top each cup with the rest of the cheese.
After about 18 to 20 minutes (I usually split the difference and bake for 19 minutes) the eggs will set and the crusts will become golden brown. Take them out of the oven and let them cool for a couple of minutes before serving.
With all the egg, ham and melted cheese, these little quiches will keep you full for a while. I recommend serving with some fruit for a really balanced meal.

- 2 tbsp chopped onion
- 2 tbsp milk
- 3 tbsp chopped parsley
- 1/2 cup chopped cooked ham
- 1/2 cup shredded cheddar cheese
- 3 eggs
- 1 package ready-made crescent rolls
- salt and pepper

If you’re using a dark colored muffin tin, pre-heat the over to 350-degrees. If not, pre-heat the over to 375-degrees.

In a medium-sized bowl, combine the eggs, milk, parsley and a little salt and pepper. Make sure to whisk it together so the egg mix is smooth and thoroughly combined.

Open the crescent rolls and place a triangle into each muffin cup. You’ll need to overlap the ends of the triangle but leave an opening in the center to hold the rest of the ingredients.

Into each of the crescent rolls add in a little ham. Then using 1/4 cup of the cheese, sprinkle the cheese onto the ham.

Once all the cups are filled, add in the egg mixture to each crescent roll. Then sprinkle the rest of the cheese on top of each mini quiche.

Bake the mini quiche in the oven for 18 – 20 minutes or until the eggs set and the crusts are golden brown. Once they are done, let them cool for a couple of minutes, then loosen the outside of each quiche with a knife, pop them out and serve.
Note: Instead of parsley, try using a little spinach or even chopped green pepper. To prevent sticking, spray the pan first with a non-stick cooking spray.
Can I prepare or bake the crescent rolls ahead of time?
I’ve never tried baking the crescent rolls ahead of time. I’m not sure if it would overbake.
