A simple and easy homemade tomato potato soup. Made with tomatoes, ham, potatoes and beans, this soup is rich with flavor and ready to warm you up on a cold day.

When I was little, I remember after being out all day on my kid adventures – riding bikes, running around outside, long walks with the dog. I would come home for lunch and be greeted by the smells of my Dad’s homemade tomato potato soup.

I think those childhood memories, have made me a soup fan. Something, my son is also becoming. After stomping around outside, especially in winter weather, I can give him a warm bowl of soup and he’s pretty happy.

My dad never got to meet my kids. Unfortunately he died before knowing the joys of my kiddos. So to me it’s very special to be able to give them a part of my Dad and a continue to create a memory for them.

Homemade Tomato Potato Soup – Keepin’ It Simple

I’ve found most potato soups are cream-based, but this is not your typical potato soup. It’a a very simple and savory tomato broth filled with kidney beans, potatoes and ham. While filling, the flavors are clean, uncomplicated and never heavy, proving that sometimes simple is just better.

Tips & Tricks

When my dad used to make this, he really loaded up on the onion and would actually put in two cups. I’ve lowered it down a bit to make it a little less heavy.

The surprising part about this soup is that it doesn’t have a lot of seasoning, don’t get crazy, try it with just the simple seasoning first. It seems almost too easy, but it’s really flavorful.

Also make sure to put in the one can of beans undrained. I know it’s weird, but this helps to thicken the soup. If you want to add more beans, you need to make sure you drain and rinse any additional beans.

My favorite partner for this soup is a grilled cheese, but fruit or crackers are also great companions.

A quick and easy soup that will warm up the coldest winter night. Tender potatoes, ham and heart-healthy beans swim in a flavorful tomato broth.

ingredients
  • 1 cup chopped onion
  • 2 garlic cloves (minced)
  • 3 tbsp butter
  • 4 cups water
  • 2 cups cooked ham (chopped)
  • 1 can beef broth (14.5 oz.)
  • 1 can tomato paste (8 oz.)
  • 3 cups cooked & diced potatoes
  • 1 can undrained red kidney beans (14.5 oz)
  • 1 can red kidney beans (14.5 oz) drained and rinsed
  • 1 bay leaf
  • salt & pepper
instructions
  1. In a large pot, melt the butter and saute the onions and garlic until tender. Then add in the water, beef broth, tomato paste, ham, beans, bay leaf, salt and pepper. 

  2. Bring the soup to a boil and then lower to a simmer. Let the soup simmer uncovered for 20 minutes. 

  3. In a separate pot, cook the cubed potatoes until soft, but still slightly firm. They should hold their shape. This usually takes about 10 – 15 minutes at a boil. Once done, drain and set aside.

  4. Once the tomato soup has simmered for 20 minutes add in the drained and cooked potatoes. Let the soup simmer for another 10 minutes. Let it cool for a bit before serving.
