ingredients

  • 2 cups elbow macaroni
  • 2 tbsp butter or margarine
  • 2 tbsp flour
  • 1 cup milk
  • 1/2 cup heavy cream
  • 3 cups shredded cheese I like to use chedder & colby jack
  • sprinkle of salt & pepper

instructions

  1. Cook macaroni in unsalted water according to directions - approximately 7 minutes. Drain the macaroni into a colander and set aside.

  2. Return your pan to stove and on medium heat, melt the butter. Make sure to not let it brown or begin to burn. Add in flour, salt and pepper, stirring slightly until it's moistened. Then add in the milk and heavy cream.

  3. Once the milk mixture begins to bubble and thicken slightly, add in the cheese. Stir until it's melted and smooth.

  4. Lower the heat to the pan and add in macaroni. Stir to coat the macaroni with cheese and let everything cook for about 3 minutes. Making sure not to let the macaroni burn.

  5. If desired, sprinkle a little Parmesan cheese on top and let it cool for about 10 minutes.

Recipe Notes

Note: To make the time even shorter, there's a quick cook macaroni that takes only 3 minutes to boil. I've used this when I'm really in a pinch for time.
