One Skillet Macaroni & Cheese
Oh mac & cheese, how I heart you.

I can’t even tell you how many times I’ve made this one skillet, homemade macaroni and cheese. It’s so incredibly quick and easy, there’s really no reason to make a boxed version – aside from the fact that the box is also pretty tasty.

Whenever I make this, I always feel like I’m putting something homemade and delicious on the table. Plus, you can always swap out the macaroni with a wheat or gluten-free option, to help with any dietary restrictions.

To give it a little richness, I add in some heavy cream, but if you don’t have any cream available, just stick to milk. The amount of liquid is the same.

When I’m feeling really pressed for time (or lazy), I’ll add some chopped ham to create a main dish instead of a side. Or I’ll jazz it up with some chopped tomatoes on top or blend in some cooked broccoli.

However, you choose to make this your own, it’s a super simple version of a classic that’s been one my family’s favorites.

Gooey and cheesy no bake homemade macaroni and cheese. With this one pan recipe, making this family favorite is quick and easy.

ingredients
  • 2 cups elbow macaroni
  • 2 tbsp butter or margarine
  • 2 tbsp flour
  • 1 cup milk
  • 1/2 cup heavy cream
  • 3 cups shredded cheese I like to use chedder & colby jack
  • sprinkle of salt & pepper
instructions
  1. Cook macaroni in unsalted water according to directions – approximately 7 minutes. Drain the macaroni into a colander and set aside.

  2. Return your pan to stove and on medium heat, melt the butter. Make sure to not let it brown or begin to burn. Add in flour, salt and pepper, stirring slightly until it’s moistened. Then add in the milk and heavy cream. 

  3. Once the milk mixture begins to bubble and thicken slightly, add in the cheese. Stir until it’s melted and smooth.

  4. Lower the heat to the pan and add in macaroni. Stir to coat the macaroni with cheese and let everything cook for about 3 minutes. Making sure not to let the macaroni burn. 

  5. If desired, sprinkle a little Parmesan cheese on top and let it cool for about 10 minutes.

Note: To make the time even shorter, there’s a quick cook macaroni that takes only 3 minutes to boil. I’ve used this when I’m really in a pinch for time.
