Warm up a cold day with a little fiesta! Whip up some spicy taco soup and top it off with sour cream, avocado slices, chives, cheese and even some nacho chips.
On medium high heat saute the onions, green peppers and ground beef in the olive oil. When the beef is no longer pink and the onions and peppers are soft, drain off the oil and then return pan to stove.
Add in the beef broth, water, tomato sauce, diced tomatoes, beans, corn, taco seasoning and salt and pepper to taste. Bring the pot to a boil and then lower the heat and simmer for 15 minutes.
