Tasty Taco Soup

How do you bring a little zest and zing into a boring old weeknight? Whip up some quick and easy Taco Soup to transform dinner into a mini fiesta!

If you have little ones, you may want to cut back on the taco seasoning a bit, it may be a little too spicy for them. I know my gang is very vocal about spices and freely voice their opinion. I usually give them milk to drink with it and that normally counteracts their complaints.

Give them a reason to eat chips for dinner.

Turn a simple dinner into something a little more fun. Add in some tortilla chips, shredded cheese, sour cream, chives and even slices of fresh avocado to jazz it up. The kids love to dip and crush the tortillas into the soup and surprisingly, it’s a pretty good way to get them to eat plenty of protein and veggies.

Warm up a cold day with a little fiesta! Whip up some spicy taco soup and top it off with sour cream, avocado slices, chives, cheese and even some nacho chips.

ingredients
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 3/4 cup chopped onion
  • 1 cup chopped green pepper
  • 1 packet taco seasoning
  • 1 14 oz can beef broth
  • 1 14 oz can diced tomatoes
  • 1 14 oz can tomato sauce
  • 2 14 oz can kidney beans (drained)
  • 3 cups frozen sweet corn
  • 1/2 cup water
instructions
  1. On medium high heat saute the onions, green peppers and ground beef in the olive oil. When the beef is no longer pink and the onions and peppers are soft, drain off the oil and then return pan to stove.

  2. Add in the beef broth, water, tomato sauce, diced tomatoes, beans, corn, taco seasoning and salt and pepper to taste. Bring the pot to a boil and then lower the heat and simmer for 15 minutes.

Note: If you’re a little afraid of spice, reduce the taco seasoning to a 1/2 packet.
