Pumpkin Spice Carrots
Pumpkin spice is all the rage and it’s a sign that fall is finally on the way. It’s too tasty to just add to pastries and coffees, so I figured, why not add a little pumpkin spice to dinner?
The carrots are coated in a brown sugar glaze to help enhance their natural sweetness. Adding in a sprinkle or two of pumpkin spice, amps up the yum factor.
To the kids they are knows as candy carrots. Whatever you want to call them, kids will gobble them up. This is one time you won’t have to remind anyone to eat your vegetables.

- 1 16oz bag of baby carrots
- 3 tbsp butter
- 2 tbsp light brown sugar
- 1/4 tsp pumpkin pie spice
- sprinkle of salt and pepper

Cover carrots with water and boil for 8 -10 minutes. They should be tender but still slightly firm. Drain and put aside.

Using the same pot, melt the butter and then add in the brown sugar, the pumpkin spice and a little salt and pepper. The sugar should dissolve and start to foam slightly – about a minute.

Next add in the carrots and stir to coat with the syrup. Enjoy!
